Sheet Pan Fish with Mayo-Lemon Sauce & Asparagus

Sheet Pan Fish with Mayo-Lemon Sauce & Asparagus 

I don't like recipes that talk forever so let's just get to it!


Ingredients:

  • 1 bunch of asparagus, woody ends removed
  • 4 (6 ounce) mahi mahi or any white fish fillets
  • Sea salt & black pepper
  • 1 lemon, cut in half
  • 2 T olive oil
  • 1/4 cup mayo
  • 1/2 t onion powder
  • 1/2 garlic powder
  • Pinch of cayenne pepper
  • 1/4 cup panko or gluten-free breadcrumbs 

Directions:
  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Arrange the asparagus on one side of the baking sheet and the fish fillets on the other. 
  3. Season the fish generously with salt and pepper and squeeze over the juice from half the lemon. Season the asparagus with salt and pepper and drizzle 1 T of the olive oil.
  4. In a small bowl, mix the mayo, onion powder, garlic powder, and cayenne. In another small bowl, mix the breadcrumbs and the remaining olive oil and season with a pinch of salt. Top each fillet with about 1 T of the mayo mixture, then sprinkle over breadcrumbs.
  5. Transfer to oven and cook for about 12 minutes, until the fish is cooked through and the breadcrumbs are starting to brown.
  6. Squeeze over the remaining lemon juice and serve immediately.
